Wordless Wednesday: Ginormous Zucchini

This is my first summer growing anything other than tomatoes in my garden. Last Friday, after several days of neglecting my vegetable plants, I went out to check on them. And frankly I was shocked at the huge zucchini I found there.




I have gotten oversized zucchini from our CSA before, but nothing like this. For comparison, here it is next to my size 8 sandals.



On Saturday we cut it up, put some olive oil and garlic salt on it and threw it on the grill. It was delicious. Looking forward to many more!

Simple Cherry Tomato Salad Recipe

Between my own garden and our farm share this week, I had a nice amount of beautiful cherry tomatoes to enjoy. I get bored with traditional salad after a while so I decided to use them for a simple tomato salad. Not only was it delicious but I love the colors. It is super quick and easy to make and perfect if you are looking for a light summer meal or snack.And best of all - it is healthy!


Simple Cherry Tomato Salad Recipe


Ingredients
1 Pint Cherry Tomatoes
Extra Virgin Olive Oil
Balsamic Vinegar
Garlic Salt
Basil (dried or fresh)

Directions
I apologize in advance for my lack of exact measurements. With something like this for me, it is more a trial and error of adding ingredients until the taste is just right.

1. Cut cherry tomatoes in half, place in bowl and lightly coat with garlic salt.

2. Drizzle with olive oil and balsamic vinegar to taste and add basil.

3. Serve and enjoy!

How Does My Garden Grow?

A green thumb I certainly am not. I am not the person you call to water your plants when you go away. Case in point, the last week of school my 7 year old went on a field trip. He brought back a biodegradable planter with sunflower seeds planted in it. Over the next two weeks or so it sat on the kitchen window sill and more than a dozen sunflower seedlings sprouted up. Once they were big enough, I planted them outside. The day after, all but two were dead and now only one remains. I'm a plant killer. Which is rather sad because both my mother and grandfather are expert gardeners. (Say hi to my grandpa, he is a daily reader!)

See my problem is I don't like bugs. Or dirt. But I do like fresh organic veggies. So this year I am really trying to suck it up and get some veggies growing. I bought some organic plants from our CSA back in June and surprisingly, I have not killed them yet! In fact, they are doing rather well.

So how does my garden grow?

I have grown cherry tomatoes for a few years now, but this is my first time with peppers and zucchini. I am really anxious for them to grow and ripen! We also have two apple trees that we planted on Earth Day, but that is a different post for a different day. (Trees are hard).
